Happy Founders’ Day! Continue celebrating MPA’s birthday at home with the delicious Founders’ Day vanilla cupcake recipe. These are the cupcakes that were distributed to Lower School students and baked during the virtual Middle School baking show to celebrate! Thank you for the recipe, Chef Doug!

Cupcakes

Equipment needed: Measuring cups, large mixing bowl, pastry blender or two large forks, small mixing bowl, measuring spoons, wire whisk, rubber spatula, cupcake pan, paper/foil muffin cups, flour sifter

Ingredients:

  • 1 1/4 Cup of Sugar
  • 3⁄4 Cup softened butter
  • 4 eggs
  • 2 teaspoons vanilla
  • 1 1⁄2 cups flour
  • 1 1⁄2 teaspoons baking powder
  • 1⁄2 cup milk

Steps:

  1. Preheat oven to 350 degrees, place muffin cups into your pan. Set aside.
  2. In large bowl, cream together the sugar and your butter.
  3. Separate 2 of your eggs discarding the yolks, stir into mixture.
  4. Add the other two whole eggs, lightly stir.
  5. Add the vanilla and milk.
  6. Add the flour and baking powder and shift into the mix.
  7. Only mix until smooth, don’t over beat!
  8. Place batter evenly into the 12 cups
  9. Bake for 30 to 38 minutes. The cake will spring back when you touch it to confirm
    doneness. Let cupcakes cool before adding frosting.

Cream Cheese Frosting

Equipment Needed: Electric stand or hand mixer, rubber spatula, measuring cups, measuring spoons. Optional: Pastry bag with a star tip or zip -lock bag for convenience.

Ingredients:

  • 1⁄2 cup butter – Softened
  • 1-pound cream cheese – softened
  • 3 cups powdered sugar
  • 2 teaspoon vanilla
  • 2-4 tablespoons milk
  • OPTIONAL (and fun!): Cupcake decorations for the top!

Steps:

  1. In mixer, starting on low speed, beat butter and cream cheese until blended.
  2. Add powdered sugar and vanilla, continue beating while increasing speed.
  3. Add milk as needed.
  4. On cooled cupcakes, either pipe frosting or spread the frosting evenly. Decorate to your heart’s
    content.
